An incredibly easy dipping sauce perfect for Asian dumplings, scallion pancakes, gyoza or potstickers, tempura, and egg rolls. Bright, savory, and umami with soy sauce, ginger, rice vinegar, and sesame oil.
My refrigerator is 75% mysterious sauces in jelly jars.
And, I'm always on the hunt for another new sauce. This sauce, like any other, should be tweaked to your liking by adding a bit more of this or that. I think the combination of flavors really works here though. Light or dark soy, a mellow rice vinegar paired with a hearty black vinegar (if you don't have black, just up the rice vinegar by a tsp), sugar, grated ginger, sesame oil, and a pinch of white pepper. I like to top it with green onions and sesame seeds. I'm also known to add a bit more sugar, I really like the sweet and salty combination.
This Asian Dipping Sauce
stays for days in the refrigerator and we use it on everything Asian inspired, especially during sourdough season when I'm using sourdough starter discard to make Sourdough Starter Scallion Pancakes.
