Easy Thai Chicken Pizza with Pretty Thai Peanut Sauce is a bright combination of Thai flavors that can be on your plate in 20 minutes. It's pizza with a twist! Perfect for a quick meal or slice it into smaller squares for a delicious appetizer.
Thai Pizza Base
The base is simply:
- Store-bought flatbread crust or pizza base
- Creamy Pretty Thai Peanut Sauce
- Sliced cooked chicken
- Slivers of red onion
- Shredded part-skim mozzarella cheese
- A sprinkle of Thai Seasoning Salt (or salt & pepper, optional)
It bakes up in a hot preheated 425F oven for about 10 minutes. I bake mine directly on a pizza steel but a cookie sheet works perfectly fine. The ingredient amounts will vary depending on how loaded you like to build your pizzas, but I find for a 12-inch flatbread or pizza base I'll use 4 ounces of chicken, about ¼ cup of red onion, and 1 cup of shredded cheese.
Thai Pizza Slaw Toppings
Part of what makes this pizza unique is the fresh & crunchy Thai Slaw that gets piled on top of the piping hot pizza. Crispy flatbread, gooey cheese, and crunchy fresh veggies with a Thai Peanut Dressing is heaven. It smacks of freshness, bursting with flavor, and has that 'wow' tastebud surprise we're going for. The ingredient amounts noted in the recipe will yield about 3 cups of slaw. That will top a 12-inch pizza, so each slice gets a nice layer of veggies.

Yay for a Thai Peanut Sauce that not only works but is as good as homemade! I can't tell you how many sauces I've tried where something just wasn't right. But this sauce nails it - perfectly tart and tangy, sweet and spicy, a deep peanut flavor with a background of umami. It has a depth of authentic Thai flavor that hits all the right notes. The Pretty Thai Seasoning Salt is a little addicting, gotta warn you. I found myself sprinkling it across everything. While it's an optional ingredient for the pizza, it will make that Thai Slaw sing.
Easy Swaps and Pizza Toppings
Chicken & onion with Pretty Thai Peanut Sauce is such a great combination, but this pizza is perfect for swaps so that you can include your favorite toppings. If you'd like to go meat-free, then omit the chicken, or you can replace it with extra-firm tofu. We do both! I'm usually saving roast chicken from earlier in the week, or I'll hit up the deli aisle to bring some home. Even easier!
Swap out the red onion for white or yellow - whatever you have on-hand. Almost everyone had a carrot, and I recommend that in the slaw, along with the green onion. Bean sprouts are pretty much everywhere. Just be sure to rinse them well and pick off any discolored ends. If all you can find is canned bean sprouts, skip them altogether. You could swap in slivers of Jicama instead - or anything crunchy with a snap to it will work.
Coconut Cream Drizzle
Do we really need this? No. But it is GOOD and adds an extra layer of flavor, interest, and a silky note to the rich peanut flavors. If you happen to have the plain Greek yogurt and some coconut cream (or milk) in the pantry - then 100% go for it. It's a 3-minute sauce that I think is worth it.

Easy Thai Chicken Pizza with Crunchy Thai Slaw and Coconut Cream Drizzle
Ingredients
For the Pizza Base
- 1 flatbread or pizza base store-bought, 12 inches to serve 2-3
- ½ cup Pretty Thai Peanut Sauce
- ¼ cup sliced red onion
- 1 cup shredded part-skim mozarella
- 4 oz cooked chicken sliced or shredded
- Pretty Thai Seasoning Salt, optional or salt & pepper to taste
For the Thai Slaw
- 1 cup sliced carrots match stick size
- 1 cup bean sprouts fresh, rinsed and drained
- 1 cup green onion sliced lengthwise
- 2 tablespoons chopped peanuts
- 1 small bunch cilantro leaves, divided small handful, either left whole or roughly chopped (same some for garnish and the Coconut Cream Drizzle)
- ¼ cup Pretty Thai Peanut Sauce
- 2 teaspoons fresh squeezed lime juice
- sprinkle Pretty Thai Seasoning Salt, optional
For the Coconut Cream Drizzle (optional)
- ¼ cup plain yogurt
- ¼ cup coconut cream
- 2 teaspoons fresh squeezed lime juice
- 2 teaspoons chopped cilantro
Garnish
- additional squeeze of Pretty Thai Peanut Sauce, cilantro leaves, chopped peanuts.
Instructions
For the Pizza Base
- Preheat the oven to 425F. This pizza bakes on a cookie sheet or a pizza steel or stone. Allow the cookie sheet to pre-heat in the oven.
- Slice the red onion and grate the cheese. Slice or shred the cooked chicken if needed.
- Spread ½ cup Pretty Thai Peanut Sauce on the flatbread (or pizza base).
- Place ¾ cup shredded cheese on top of the sauce (reserving ¼ cup to sprinkle on top). Add the chicken, the red onion, and the reserved cheese. Lightly season with Pretty Thai Seasoning Salt (or salt & pepper if desired).
- Carefully slide the pizza onto the hot cookie sheet, steel, or stone. Bake until the cheese is bubbly and the crust is crispy. About 10 minutes. Keep your eye on it to prevent over-browning.
For the Thai Slaw
- In a medium bowl add sliced julienned carrots, rinsed bean sprouts, and thinly sliced green onions. Add a small handful of cilantro leaves (either chopped or left whole).Add roughly chopped peanuts (reserve some for garnish).
- Add the lime juice and a spinkle of Pretty Thai Seasoning Salt (optional).Mix and set aside. Can be made 30 minutes in advance and held in the refrigerator.
Coconut Cream Drizzle (optional)
- In a small bowl mix the yogurt, coconut cream, lime juice, and chopped cilantro. Can be made in advance & refrigerate until needed.
Assembly
- Remove the pizza from the oven, and while still hot, top it with the Thai Slaw. Sprinkle on a few more chopped peanuts, drizzle some Pretty Thai Peanut Sauce on top of the slaw (sparingly), then finish with the Coconut Cream Drizzle (optional). Slice into wedges or squares and serve immediately.
