Really one of the best crumble recipes out there. A moist and chewy topping (and bottom) that's crisp in all the right places. I love the surprise addition in the crumble mix which makes this topping sing. It's a perfect way to serve up fresh seasonal berries and has become my favorite go-to crumble recipe.

Food Wishes Ultimate Berry Crisp
Adapted from Food Wishes, this is a moist and chewy crumble that's crisp in all the right places. With a layer on the top and also on the bottom, it's a perfect way to serve up fresh seasonal berries. This one has become my favorite go-to crumble recipe.
Ingredients
Crumble
- 2 cups flour all-purpose
- ¼ teaspoon salt
- ¾ teaspoon baking powder
- ¾ cup sugar white granulated
- ¾ cup unsalted butter frozen, grated (1 ½ sticks)
- 1 ½ teaspoon vanilla extract
- 2 egg yolks large
- 1 to 2 teaspoon apple cider vinegar or enough for dough to “clump”
Berry mixture
- 4 cups berries mixed, of your choice: strawberry, raspberry, blackberry, blueberry, etc
- 1 teaspoon lemon zest
- 3 teaspoon fresh lemon juice
- ⅓ cup sugar white, granulated
- 1 tablespoon cornstarch
Instructions
- Heat oven 375F or 190C
- Place butter in the freezer for 30 minutes or until frozen solid. Then grate, and put it back in the freezer (I grate on a piece of parchment paper for easy transfer in and out of the freezer).
Crumble
- In a mixing bowl combine flour, salt, baking powder, and sugar. Stir to combine. Add in the frozen grated butter, tossing to separate and coat the pieces with the flour mixture.With a fork and a small bowl, mix the egg yolks, vanilla, and 1 teaspoon of apple cider vinegarAdd to the butter/flour mixture and stir to combine. Add additional apple cider vinegar, only 1 teaspoon at a time, until the crumble mixture will clump in your hand when squeezed. Set aside.
Berries
- In a separate bowl add the berries, lemon zest, lemon juice, sugar, and cornstarch. Stir until thoroughly combined.
Assembly
- Spray a 2-quart baking dish or pie/tart dish with non-stick spray. Pour in ½ of the crumble mix and press down until well compacted. Scoop in the berries, covering evenly. Sprinkle the remaining crumble mixture on top, leaving a few gaps here and there to let the beautiful color of the fresh berries pop through, and clumping some crumble pieces into larger and also smaller pieces to add varying texture.
Bake
- Bake in the preheated oven, on a baking sheet covered with parchment or foil (for easy clean-up) until the top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Check at the 30-minute mark and if appears to be browning quickly or it's the color you like already, then tent it with foil to prevent over-browning. Let cool to room temperature to allow it to set up.
