This is a simple & easy garlic scape and herb pesto that brings out the best of the garlic season. We use it on everything! It's amazing on bread, pasta, grilled fish, and chicken.
What Do Garlic Scapes Taste Like?
Garlic scapes, when picked at the right time, are mild and mellow. The flavor is more subtle than the actual garlic clove. That's what makes them so lovely. We've been growing multiple varieties of garlic for years, and have developed a trained eye to know when to harvest the scapes so they're at peak freshness. Ideally, the stems are easily pliable and bendable, and the bud is closed tightly and about the size of a large raisin. If you come across scapes that have stiff stems and the bud is dry and halfway opened, those will be bitter.

When thinking about what kind of garlic to grow you'll see descriptions that mention 'hard neck' or 'soft neck'. The scapes only grow on the hard neck variety. We grow 4 to 5 kinds of hard neck garlic including Russian Red, Music, and Montanna. They will give is scapes so it's double harvest. Soft neck are also lovely to grow. We like California Early.

Garlic Scape Pesto
Ingredients
- 1 cup fresh herbs parsley, basil
- 1 cup garlic scapes
- ½ cup olive oil
- salt & pepper to taste
Instructions
- Blend all in a food processor and mix until smooth. Store in an airtight jar and top with some olive oil to keep a fresh green color.
