I think I've eaten my weight in this Ultimate Pumpkin Spice Bread. It is my absolute favorite fall recipe with all the credit going to Solo Food's secret ingredient: Solo's Prune Plum Cake & Pastry Filling. A pureed dried plum that brings incredible moisture, texture, and a depth of flavor that makes this pumpkin spice bread special.
Solo's secret ingredient cuts the fat and calories
I cut the fat in ½ and replaced it with the Prune Plum filling. You won't miss the fat, trust me. The moist crumb light and spongy, not gooey or dense. Less fat, incredible flavor, win-win!
Depth of flavor with warm spiced pumpkin taste
It just tastes more pumpkin-y. I happen to love prunes, my family loves prunes. We eat them as snacks and use them in savory dishes. But, being completely honest, I can't really pull out a distinct prune flavor but I know it's doing its magic with enhancing the pumpkin spice, cutting the fat, and improving the moist texture. So, if you're skeptical about prunes, or maybe not a fan, give this a chance. It not only works - it makes this bread better.
Five warm spices in this pumpkin bread
Cinnamon, nutmeg, allspice, clove, ginger. The perfect combo in my opinion. The beauty of pumpkin spice bread is you can tailor the spice selection and intensity to fit your own tastes. Not a fan of clove? Leave it out! I know some bakers who prefer to dial down the spice so if you're in that boat then knock back on what I call for in the recipe. Also worth mentioning, if you're pureeing your own garden pumpkins - the flavor might be different than using a canned product. Just be sure to taste the pumpkin mixture, and see if you need to adjust the spices adding a little bit at a time. You can always add more but it's harder to take it out.
What about toppings?
We have options! I love an easy and straight forward approach to pumpkin spice bread so I'm all in for zero toppings and keeping things simple. But, you can't go wrong with a lovely light crumb streusel to give this bread a little crunchy texture. Or, maybe an easy cream cheese frosting to mellow the flavors. Both work incredibly well.

Ultimate Pumpkin Spice Bread With Solo Foods
Ingredients
- 3 ½ C flour all purpose
- 1 ½ teaspoon salt
- 1 ½ teaspoon baking soda
- 1 ½ teaspoon baking powder
- 2 tsp cinnamon
- 1 teaspoon ginger
- ½ teaspoon cloves
- ½ teaspoon allspice
- ½ teaspoon nutmeg
- 2 C sugar
- 1 C vegetable oil or neutral oil of your choice
- 1 C Solo Prune Plum Filling see notes
- 1 ½ C pure pumpkin filling see notes
- 4 eggs
- Streusel Topping - Optional see notes
- Cream Cheese Frosting - Optional see notes
Instructions
- Heat oven to 350f and prepare loaf pans by lining with parchment paper and spraying with non-stick baking spray (or butter). If you are making a streusel crumb topping or a cream cheese frosting prepare this step now (or ahead of time).
- In a medium bowl whisk together all dry ingredients (flour, salt, baking soda, baking powder, all spices).Set aside.
- In a large mixing bowl combine sugar, vegetable oil, Solo Prune Plum Filling, pumpkin, eggs.Whisk until thoroughly combined.
- Add dry flour mixture and combine thoroughly. Avoid over-mixing.
- Pour batter into prepared loaf pans. The batter will be thick. Smooth out the top, working it into the corners.
- If using the Streusel Crumb Topping, add that now, sprinkling over the entire surface, or just down the middle to create a pretty contrast.
- Bake 45 - 60 minutes on the center rack of the oven, or lower third. Avoid baking on a top rack or the bread will over-brown.Check at the 30-minute mark and loosely tent with foil if needed to prevent over-browning while the bread finishes baking. Remove when a toothpick, skewer, or knife comes out clean.
- Allow to cool 15 minutes in the pan, then remove and finish cooling on a baking rack.
- This bread is delicious as is, with the streusel topping, or with Easy 5 Minute Cream Cheese Frosting. If you choose to frost it, adding a pretty garnish is easy and brings out the pretty colors or the bread: I use chopped cranberry, walnut, pumpkin seed, grated lemon. I use the garnish sparingly and in just the center for a pop of color.
